Boccasanta has a pale-yellow colour, it is clear and quite solid, with white peel fruit and white flowers perfumes, the taste gently drifts to citrus notes. Enjoyed on its own or paired with white meats, pasta or fish dishes, the palate is rewarded with a long finish, highly characteristic of the vineyard.
Each variety is collected in several steps and the grapes are vinified separately. The harvest is strictly manual in 15 kg boxes. Once transferred to the winery, the grapes are de-stemmed and kept for 48 hours at 5 ° C in a stainless steel tank then pressed in a soft way. The must obtained is poured into stainless steel tanks where the alcoholic fermentation takes place at a temperature of 15 ° C. In February, the three masses are combined for bottling.
