Cabernet Sauvignon grapes have the ability to adapt at the most different climatic conditions mantaining its characteristics and expressing the terroir. This wine has ruby red colour drifting to violet, it is aromatic, floral and gently solid. The taste is complex, elegant and suitable for a long aging. The harvest was done by hand in boxes of 15 kg at the beginning of October, choosing the best bunches of Cabernet Sauvignon. Then it proceeded with a soft pressing in stainless steel tank which was followed by the start of the alcoholic fermentation at temperatures between 26-30 ° C for a week followed by maceration for a total of about 10-15 days. The wine was placed in French oak barrels for malolactic fermentation (30% new). The aging took place for about 18 months in ‘barriques’ and then, for at least six months in the bottle before being put on the market. Strong demand for this riserva places pressure on availability, early ordering is recommended.
